1 pkg. UNCLE BEN'S® chicken-flavored rice mix
2 scallions, chopped
1/2 green pepper, chopped
1/2 c. stuffed green olives, sliced
2 oz. marinated artichoke hearts, chopped
1/4 tsp. curry powder
1/3 c. mayonnaise
Salt and pepper

Cook rice according to package directions. Drain the artichokes and toss all vegetables with the cooked rice. Mix the marinade with mayonnaise and seasonings. Fold into the rice and vegetable mixture. Serve warm or cold. Cooked chicken, turkey, or seafood may be added, if desired. Serves 4-6.
