GREEN TOMATO PRESERVES 
11 c. green tomatoes, chopped
8 c. sugar
2 lemons, sliced thin

Cut tomatoes into small cubes or chunks. Cover with hot water and boil five minutes; drain.

Add sugar to tomatoes and let stand for three hours or longer. Drain off syrup into kettle and boil rapidly until syrup spins a thread when dropped from a spoon.

Add tomatoes and lemons. Boil until thick and clear, about 10 minutes. Pour into sterilized jars and seal immediately. To ensure sealing, process in hot water bath for 10 minutes.
