CORNBREAD FOR CARMEN 
1 c. all purpose flour
1 c. yellow, white, or blue cornmeal
2-4 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1 c. milk
1/4 c. cooking oil or shortening, melted

Grease a 9 x 9 x 2 inch baking pan; set aside. In a large mixing bowl stir together flour, cornmeal, sugar, baking powder, and salt. Make a well in the center of the dry mixture. In a medium mixing bowl combine eggs, milk, and cooking oil or melted shortening. Add egg mixture all at once to dry mixture. Stir just until moistened (batter should be lumpy). Pour batter into the prepared baking pan. Bake at 425 degrees for 20-25 minutes or until wooden toothpick inserted near the center comes out clean. Cut into squares. Makes 9 servings.
