PINEAPPLE CHEESECAKE BARS 
1 c. flour
1/2 c. sugar
1/2 c. butter
8 oz. cream cheese
2 tbsp. sugar
1 egg, slightly beaten
1 tsp. vanilla
8 oz. can crushed pineapple
3/4 c. flaked coconut
1 tbsp. melted butter

Mix 1 cup flour, 1/2 cup sugar and 1/2 cup butter like you would pie crust. Press in 8 or 9 inch square pan. Bake 20 minutes in slow oven, 325 degrees.

Cream 2 tablespoons sugar, cream cheese, egg, vanilla and drained pineapple. Spread on warm crust. Top with 1 tablespoon melted butter and flaked coconut. Put back in oven 15 minutes longer at 350 degrees until golden.
