PINEAPPLE CHEESECAKE BARS 
1 c. flour
1/2 c. sugar
1/2 c. butter
2 tbsp. sugar
1 tsp. vanilla
1 c. coconut
8 oz. pkg. cream cheese
1 egg
2 tbsp. milk
20 oz. can crushed pineapple, drained
1 tbsp. butter

Combine flour, sugar and 1/2 cup butter. Press into ungreased 13"x9" pan. Bake at 350 degrees for 10 to 15 minutes.

Combine 2 tablespoons sugar, vanilla, cream cheese, egg and milk. Beat for 3 minutes. Stir in pineapple. Pour over partially baked crust. Combine coconut and 1 tablespoon butter. Sprinkle over filling. Bake at 350 degrees for 15 to 20 minutes. Cool completely. Cut into bars and store in refrigerator.
