SCROD WITH SICILIAN OLIVES | |
1 lb. scrod 1/2 onion, chopped 1 garlic, minced 16 oz. can Italian plum tomatoes 1/2 tsp. each salt, pepper, red pepper flakes, fresh basil, parsley 1 sm. celery stalk with leaves 10 to 12 slices sicilian green olives Saute onion in oil or low calorie butter. Add garlic. Chop tomatoes. Add all spices and celery leaves along with sliced sicilian olives. Simmer 20 minutes, covered. Add scrod. Cook uncovered for 25 to 30 minutes. |
