FLORENTINE COTTAGE CHEESE
NOODLES
 
4 c. med. egg noodles
10 oz. pkg. frozen, chopped spinach, thawed & drained
2 c. cottage cheese
1/2 c. Parmesan cheese
1/2 c. sour cream
1/2 tsp. salt
1/4 tsp. hot pepper sauce
1/4 tsp. basil
1/4 tsp. thyme
1 tbsp. butter
1/4 c. bread crumbs

Cook noodles according to package. In a large bowl mix spinach, cottage cheese, Parmesan cheese, sour cream, salt, hot sauce, basil and thyme. Add noodles.

Turn into 1 1/2 quart casserole. In a small bowl combine melted butter and bread crumb. Sprinkle over casserole. Bake at 350 degrees for 45 minutes. Serves 6.
