CAROL'S CARROT CAKE 
4 eggs
1 1/2 c. Crisco oil
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 c. grated carrots

Beat eggs well and mix in oil and sugar. Mix together flour, soda, cinnamon and salt and add to egg mixture. Add carrots and mix well. Pour into three 9 x 1-inch greased cake pans.

Bake at 350°F for 20 to 25 minutes or until tests done. Cool and frost with Cream Cheese Frosting.

Cream Cheese Frosting:

1 (8 oz.) pkg. cream cheese
1 (1 lb.) pkg. confectioners sugar
1 stick butter
1 c. chopped pecans
2 tsp. vanilla

Cream together cream cheese and butter. Add sugar and vanilla and beat well. Add pecans and spread on cake. This cake is very moist, easy to make and delicious. I purchase the grated carrots for this recipe at the salad bar in my grocery store.
