STIR-FRY ORIENTAL CHICKEN 
2 whole chicken breasts, boned, skinned & cut into chunks
1/4 c. oil
1/2 c. diced red pepper (sweet)
1/2 c. sliced green onions, include tops
Garlic, 1 clove, crushed
1/2 c. maple syrup
1/4 c. soy sauce
1/4 c. sherry
2 tbsp. cornstarch
1/2 tsp. ginger
1 c. sliced mushrooms, sauteed in 2 tbsp. butter
1/2 c. cashew nuts
Dash of cayenne

Fry chicken in oil 8 minutes. Add pepper, onion, garlic. Stir fry 3 to 4 minutes. Drain. Combine maple syrup, soy sauce, sherry, cornstarch, ginger and cayenne. Add to chicken, cook until thickened, 3 minutes. Stir in cashews and mushrooms. Heat 1 minute. Serve with rice. This recipe may be doubled or tripled to serve many. Great party choice. 4 servings.
