SNOW PEAS AND MUSHROOMS 
3/4 lb. snow peas
1/2 lb. shitake mushrooms, or any other fresh
1 tbsp. olive oil
1 tbsp. butter
2 tbsp. shallots, finely chopped
1/2 tsp. garlic, minced
Salt, pepper to taste

Clean peas, take off ends. Wash and trim mushrooms. Slice very thinly. Bring water in pot to boil (you only need enough to cover peas). Add peas and salt, bring water to boil again, simmer 2 minutes. Drain.

Meanwhile, heat olive oil. Add mushrooms, salt and pepper. Saute over high heat until all moisture has evaporated and mushrooms are browned (lightly). Add butter, shallots, garlic and peas. Saute for 1 minute. Enjoy! 4 servings.
