UPPER CRUST CHICKEN 
10 white bread slices (sandwich)
2 c. chopped, cooked chicken
1 c. celery slices
2 c. shredded sharp cheddar cheese
1 c. mayonnaise
2 eggs, slightly beaten
1/2 tsp. salt
1/2 tsp. poultry seasoning
1 1/2 c. milk

Trim crust from bread and cut crust into cubes. Cut bread slices diagonally into quarters or halves. Combine bread crust cubes, chicken, celery and 1 3/4 cups cheese. Mix well. Spoon into baking dish (8"x11"). Arrange bread slices on top overlapping each. Combine mayonnaise, eggs, poultry seasoning and salt; mix well. Gradually add milk until blended. Pour over bread soaking each piece. Sprinkle wtih remaining cheese. Cover and refrigerate overnight. Bake, uncovered at 375 degrees for approximately 30 minutes. Serves approximately 8.
