APPLES READY FOR PIES 
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
3 tbsp. lemon juice
2-3 drops yellow food coloring
1 tsp. salt
10 c. water

Boil all together until it starts to get thick. Pack raw apples in jars, pour mixture over apples, run knife in jar to get bubbles out. Cold pack for 20 minutes.
