PUMPKIN CRANBERRY BREAD 
2 eggs, slightly beaten
2 c. sugar
1/2 c. oil
1 c. solid pack or fresh pumpkin
2 1/4 c. flour
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1 1/4 c. chopped fresh cranberries
2 greased & floured loaf pans
Pumpkin pie spice

Preheat oven to 350 degrees. Combine first 4 ingredients, mix well. Combine next ingredients (dry) in a large bowl. Push the dry ingredients to the sides of the bowl, making a "well" in the center. Pour the pumpkin/sugar mixture into the well. Stir together just until the dry ingredients are moistened. Stir in cranberries.

Spoon the batter into 2 greased and floured (aluminum or glass) loaf pans, 8 x 3 3/4 x 2 1/2 inches. Bake 1 hour. Makes 2 loaves.
