QUICK BUTTERMILK BREAD 
1 3/4 c. flour
2 tsp. baking powder
3/4 tsp. baking soda
1 tsp. salt
1/3 c. firmly packed brown sugar
1 1/2 c. uncooked oats
1 c. buttermilk or sour milk
2 eggs, beaten
1/2 c. vegetable oil
1/2 c. chopped nuts; optional

Mix flour, baking powder, baking soda, and salt in a bowl. Stir in brown sugar and oats. Add remaining ingredients; stir only until dry ingredients are moistened. Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 50-55 minutes. Cool on wire rack about 10 minutes. Remove from pan and cool thoroughly. Wrap and store. Bread will slice better if stored a day before slicing.

Powdered buttermilk may be used.
