QUICK LEMON NUT BREAD 
2 1/2 c. flour
1 c. sugar
3 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. water
1/3 c. shortening, melted
2 eggs, beaten
1 1/2 tbsp. grated lemon peel
1/2 c. lemon juice
1/2 c. chopped nuts
1/2 c. raisins

In large bowl, sift together dry ingredients. Combine water, shortening, eggs, lemon peel and juice. Add to flour mixture. Stir just until blended--do not overmix. Stir in nuts and raisins.

Pour into greased 9x5x3 inch loaf pan and bake at 350 degrees for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan and continue to cool on wire rack. Makes 1 loaf.
