MARK'S GIANT OATMEAL COOKIES 
1/2 c. butter, at room temperature
1/2 c. plus 2 tbsp. granulated sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1 c. flour
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. oats
2/3 c. raisins

Preheat oven to 375 degrees. Beat butter, 1/2 cup granulated sugar, brown sugar, egg and vanilla. Add flour, cinnamon, baking powder, soda and salt. Beat on low to blend. Add oats and raisins, mix well. Scoop 1/4 cup dough and place 4 scoops well apart on ungreased cookie sheet. Put remaining 2 tablespoons sugar in bowl and dip bottom of glass in sugar.

Press each dough scoop with bottom of glass to flatten to a circle about 1/4 inch thick. Repeat. Place on cookie sheet on middle oven rack. Bake 9-10 minutes until golden. Let cool 1 minute on sheet; remove cookies to wire rack to cool. Makes 8 to 9 giant cookies.
