SPANISH RICE 
1 c. uncooked rice
1 med. onion (diced)
1/2 c. green pepper (diced)
1 can tomato sauce (15 oz.)
Chili powder
1 tbsp. oil

Heat oil in skillet. Add rice and chili powder (1 to 10 shakes depending on how hot you like it!) and stir until rice is lightly coated with oil. Add onion and pepper and cook until tender.

Measure tomato sauce and add water to make 2 3/4 cups. Pour over rice and mix well. Cover skillet lower heat, and steam (simmer) for 25 minutes. Do not lift the lid at all until ready to serve.
