HEALTHY DANDELION GREENS 
Dandelion plants, washed in several waters, remove brown leaves, trim roots
Water
Salt
Baking soda
Fat from fried salt pork OR
Ham or bacon fat
Vinegar, if desired

Dig up the entire plant in early spring before the buds have opened. Remove any brown leaves and trim the roots. Wash greens in several waters. Put into large kettle, add salt and water to cover. When it begins to boil, add a pinch of soda. When greens are tender, drain well and pour the fat from fried salt pork, ham or bacon over it. A little vinegar may be added to suit the individual taste.

NOTE: Dandelions are a spring tonic.

WARNING!!! This recipe was used in the days before lawn and crop fertilizers and weed killers were used on your yards and fields. It is not recommended now- a-days!
