BROWNIE CAKES 
1/3 cup flour
3/4 cup sugar
2 eggs plus 1 egg yolk
7 tbsp. butter
3 oz. semi-sweet baking chocolate
Pinch of salt

In a bowl, beat flour, sugar, eggs, and yolk until smooth. In a saucepan, melt butter, chocolate, and salt over medium heat. Remove from heat; add to flour mixture, and stir. Refrigerate three hours.

Bake in greased cupcake pan for 20 minutes at 375°FF. Let cool.

Makes 12 servings.
