RED BEANS AND RICE 
1/2 c. celery, chopped
1 clove garlic, minced
1 c. zucchini, chopped
1 med. onion, chopped
1 tsp. oil
Pam
1 (16 oz.) can tomatoes (chopped)
1 (15 oz.) can red kidney beans, drained and rinsed
1/4 tsp. oregano
1/4 tsp. thyme
1/8 tsp. red pepper
2 c. hot cooked rice

Spray pan with Pam and add 1 tsp. oil. Saute onions, celery and garlic until nearly done. Add zucchini, spices and cook for 5 minutes. Add beans and tomatoes. Simmer 20 minutes. Serve over rice. 4 servings.
