HEARTY SPINACH SALAD 
4 slices bacon
2 tbsp. sesame seeds
2 tbsp. grated Parmesan cheese
10 oz. fresh spinach, washed
3 hard-cooked eggs, sliced
1/4 c. mayonnaise or salad dressing
1/2 c. sour cream
2 tsp. tarragon or cider vinegar
2 tsp. sugar
1 minced green onion
1/4 tsp. salt
1/8 tsp. garlic salt

Fry bacon slices until crisp; remove from skillet. Brown sesame seeds in hot bacon fat; remove from skillet, drain and cool them. Add Parmesan cheese to seeds and mix well. Tear spinach into bite-sized pieces.

Combine remaining ingredients (except eggs) for dressing, mixing well. Crumble the crisp bacon, toss lightly with spinach, hard-cooked egg slices, dressing and 3/4 of the sesame seed mixture. Sprinkle remaining sesame seed mixture over top. Makes 4-6 servings.
