CREAMY SPINACH AND TORTELLINI | |
1 lb. cheese tortellini 1/2 c. chopped onion 3 garlic cloves minced 2 tbsp. olive oil 9 oz. frozen chopped spinach 1 c. cubed tomatoes 1/4 c. basil leaves 1/2 tsp. salt 1/2 tsp. pepper 1 c. whipping cream 1/4 c. grated Parmesan cheese Cook tortellini to desired doneness. Meanwhile in large skillet cook onion, garlic in oil until lightly brown, about 4 minutes. Add spinach, tomato, basil, salt and pepper. Cook 5 minutes, stirring occasionally. Stir in whipping cream and Parmesan cheese. Cook until mixture comes to a boil. Reduce heat to low. Add tortellini and cook additional 5 minutes. 4 servings. |
