FRUIT COOKIES FOR DIABETICS 
1 c. water
1/3 c. salad oil
2 c. seedless raisins
2 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. liquid sweetener
2 tbsp. water
1/2 tsp. salt
1 tsp. baking soda
2 eggs, beaten
2 c. flour
1 tsp. baking powder
1/2 c. nuts

Combine 1 cup water, oil, raisins, nutmeg and cinnamon in a saucepan. Bring to and boil for 3 minutes. Let cool. Dissolve salt, baking soda, sweetener and 2 tablespoons water. Add beaten eggs to raisins when cooled. Add sweetener mixture and nuts. Mix well and bake on greased cookie sheet. Drop by spoon. Makes about 3 dozen. Bake at 375 degrees for 8 to 10 minutes.
