RAISIN BRAN MUFFINS 
1 (15 oz.) box Kellogg's Raisin Bran
2 1/2 c. sugar
5 c. flour
5 tsp. baking soda
2 tsp. salt
4 beaten eggs
1 c. Wesson oil
1 qt. buttermilk

Mix dry ingredients together, add beaten eggs and buttermilk and oil. Fill muffin tins almost to top.

Bake at 400°F. for 15 minutes. They will be dry if baked too long.

Refrigerate and cook only as needed. Keeps for 1 month or more.

I do beleave you can use applesauce, how ever I use the egg beaters in place of eggs and get the same result just less fat from eggs,I've had good luck!!!!!

I have substituted applesauce for the oil and works great. Also used egg substitute, but not at the same time. I wonder if I can half the recipe - has anyone tried a smaller batch?

I bake these in microwave muffins pan for 3 min in microwave. That way I only cook 2 per day for breakfast always having fresh hot muffins when I need. So much easier to keep, no stale muffins.
