ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1/2 c. nuts (walnuts, chopped fine)
1 c. oil
2 c. grated zucchini
3 c. flour, sifted
1/4 tsp. baking powder
3 tsp. cinnamon

In the bowl of an electric mixer beat the eggs until light and creamy. Add the oil, sugar, zucchini and vanilla; mix lightly, but well.

In a separate bowl mix the flour, baking soda, baking powder, salt and cinnamon. Add the dry ingredients to the liquid mixtures with the nuts; blend well. Pour the batter into two well greased and floured 9 x 5 x 3 inch loaf pans. Bake at 325 degrees for 1 hour. Remove the loaves from the pans and transfer them to wire racks to cool. Makes 2 loaves.
