CREAMY HAM CASSEROLE 
1 head cauliflower (2 lbs.) or 2 pkgs. frozen cauliflower
2 c. cubed, cooked ham
1 (2 oz.) can sliced mushrooms, drained
4 tbsp. butter
1/3 c. flour
1 c. milk
1 c. sharp Cheddar cheese cubes
1/2 c. sour cream
1 c. bread crumbs
1 tbsp. melted butter

Break cauliflower into buds; cook until tender. Drain. Combine ham and mushrooms. In saucepan on low heat, melt butter. Add flour, then milk. Stir until thick and add cheese and sour cream. Stir until cheese melts. Combine with cauliflower and ham mixture; turn into 2 quart casserole. Combine crumbs and remaining butter; sprinkle over top. Bake, uncovered, at 350 degrees for 20 minutes or until hot. Serves 6.
