CREAM PUFFS 
1 c. water
1 c. flour, sifted
4 eggs
1/2 c. butter
1/4 tsp. salt
1 tsp. sugar
Powdered (confectioners') sugar

FILLING:

Whipped cream
Pudding
Tuna salad
Chicken salad

In medium saucepan bring water, butter and sugar to a boil, stirring until butter melts. Add flour and salt all at once. Reduce heat and cook, stirring vigorously, until dough is smooth, forms a soft ball and leaves sides of pan (1-2 minutes). Remove from heat.

With electric mixer at medium speed beat in eggs, one at a time, beating well after each addition. Continue beating until dough is smooth and satiny. Drop batter by rounded tablespoons onto greased cookie sheet. Bake in preheated oven until firm. Cut off tops with sharp knife, remove uncooked dough, and return to oven for 5-10 minutes to dry out. When cool, fill with desired filling. Before serving, sprinkle with powdered sugar. Temperature: 400 degrees. Time: 40-45 minutes. Makes 2 dozen medium.

Note: If filling puffs with salad or a favorite spread, omit the sugar in this recipe. Do not sprinkle with powdered sugar.
