There is no need to add any extra water when cooking this zucchini recipe. The texture remains firm and crisp, and the dish easily absorbs the full flavor of the ingredients. 1-1 1/2 lb. zucchini 1 tbsp. vegetable oil 1 clove garlic, crushed 1 tsp. paprika 2 tbsp. white wine 1 tsp. dill weed Pinch cayenne Salt & black pepper Sprigs of dill for garnish 1. Cut zucchini into 1/2" chunks. 2. Put the oil and garlic in a medium bowl and microwave on high (100% power) for 2 minutes (for a 700 watt machine, 1 1/2 minutes for a 500 watt machine, 2 1/2 minutes). Add the zucchini and paprika and microwave on high for 2 minutes (for a 700 watt machine, 1 1/2 minutes; for a 500 watt machine, 2 1/2 minutes). 3. Add the wine, dill weed and cayenne. Stir well, cover and microwave on high for 3 minutes (for a 700 watt machine, for 2 1/2 minutes; for a 500 watt machine, for 3 1/2 minutes), stirring halfway through. 4. Season to taste with salt and pepper. Serve hot or cold, garnished with dill. |
