BRAN MUFFINS 
6 c. All Bran cereal
2 c. boiling water
1 c. butter flavored Crisco (melted)
3 c. sugar or 2 c. sugar and 1 c. molasses
4 eggs, beaten
1 qt. buttermilk
4 c. plain flour
1 c. wheat flour
5 tsp. baking soda
2 tsp. salt

Put 2 cups bran into a large bowl. Pour the boiling water over it and let stand while assembling the other ingredients. Mix in shortening. Mix remaining bran, sugar, eggs and buttermilk.

Sift together flour, soda and salt. Combine all ingredients. Cover and store overnight in refrigerator. Bake as much as desired in greased (or paper cup) muffin pans at 350 to 400 degrees for 20 minutes. Makes 60 muffins. Can modify with raisins, nuts, prunes or apples.

1 c. Kraft liquid butter
1 carton Eggbeater eggs
1 qt. low-fat buttermilk
