PUMPKIN MUFFINS 
1 1/4 c. whole wheat flour
1 1/2 tsp. baking soda
1/2 c. chopped dates
1/2 c. chopped walnuts
2 eggs
2 tbsp. honey
1 c. buttermilk
2 tbsp. corn oil
1 c. cooked, mashed pumpkin

Combine flour and soda in large mixing bowl. Add dates and nuts. In a small bowl, beat eggs and stir in honey. Add these to dry ingredients along with buttermilk, oil and pumpkin. Stir until combined. Divide batter among 12 paper lined muffin cups. Bake 25 minutes in 350 degree oven.
