APPLE CRUNCH PIE 
2 c. chopped cooking apples
1/2 c. packed brown sugar
1/2 c. granulated sugar
1/2 c. all purpose flour
1 egg yolk (beaten)
1/2 tsp. vanilla extract
1/2 tsp. fresh lemon juice
1/2 c. chopped nuts
1 egg white (beaten until foamy)
1 9 inch pie shell (unbaked)

Put chopped apples in a large bowl. Add sugar, flour, egg yolk, vanilla, lemon juice and pecans. Mix until well until blended. Add egg white stir, pour mixture into unbaked pie shell.

Bake at 350°F for 35 to 45 minutes or until apples are tender and brown. Take from oven and let cool before serving.
