WHOLE WHEAT PANCAKES 
3/4 c. buttermilk or reg. milk
1 egg
1 tbsp. plus 1 tsp. oil
1 tbsp. brown sugar, firmly packed
1 c. whole wheat flour
1 tsp. rounded baking powder
1/2 tsp. each baking soda and salt

In medium mixing bowl, combine milk, egg, oil, and sugar; beat thoroughly. Add remaining ingredients and stir until smooth. Use medium heat under your skillet or griddle and bake 1 large or 3 small at a time, turning over when done on one side about 2 minutes on each side of the small ones. May use non-stick spray or butter (1 teaspoon) before putting large spoonfuls of batter on skillet.

Makes 10.

Recipe may be easily doubled.
