QUICHE LORRAINE 
10" frozen pie crust (deep)
1 lg. onion, chopped
3 eggs
1 (13 oz.) can evaporated milk
1/2 tsp. dry mustard
Pepper to taste
Parmesan cheese
1/2 lb. grated Swiss cheese
2 tbsp. butter
4-5 chopped mushrooms
1 green pepper, chopped
2-3 tomatoes, chopped

Saute onions, peppers and mushrooms in butter. Beat eggs, milk and seasoning. Add all vegetables to egg mixture. Put Swiss cheese in pie crust, pour batter over top, sprinkle with Parmesan cheese. Bake about 40 minutes at 375 degrees. Let stand before cutting.
