GREEN VEGGIE BAKE 
2 tbsp. butter
1/2 c. chopped onion
1 tsp. salt
1/4 tsp. pepper
4 oz. sour cream
1 to 1 1/2 tbsp. cornstarch
1 c. broccoli
1 c. green beans
1 c. peas
1 c. American or Cheddar cheese (grated)
2 tbsp. butter (melted)
1 c. Ritz (salad) crackers

Cook onion in 2 tablespoons butter until tender. Add cornstarch, salt, pepper and sour cream. Mix well. Stir in green vegetables. Put in casserole dish and top with grated cheese. Combine remaining 2 tablespoons of butter and cracker crumbs. Place on top of cheese. Bake at 350 degrees for 30 minutes. Serves 6-8.
