SWEET AND SOUR GREEN BEANS 
1 bag frozen green beans
2 tbsp. bacon fat
1 c. boiling water
1/2 tsp. salt
1 tbsp. cornstarch
1/4 c. sugar
2 tbsp. cider vinegar
2 tbsp. lemon juice
1 tbsp. soy sauce
1/4 c. cold water
3 tbsp. sweet pickle relish

Place beans in large skillet or saucepan with tight cover; add bacon fat, boiling water, and salt.

Heat quickly, covered, until beans steam; then turn heat down and cook 15 to 20 minutes, or until tender crisp. Do not drain.

Combine remaining ingredients; pour over beans. Cook, stirring, until slightly thickened. Makes 4 servings. NOTES: If you don't have bacon fat on hand, butter works fine. Nutrition: 175 calories. Menu Suggestions: Green and Gold Rice Bake, huge hamburgers.
