VENISON CORDON BLEU 
4 Pension Tenderloin Steaks
1/2 tsp. Salt
1/4 tsp. Pepper
4 Thin slices Swiss Cheese
4 Thin slices Cooked Ham
2 tbsp. butter
1 cup Beef Broth

Flatten steaks to 1/4-inch thick. Sprinkle with salt and pepper. Top each steak with a slice of cheese, and a slice of ham. Roll up tight. Secure with toothpicks.

In large skillet, brown rollups in butter on all sides. Transfer to baking dish. Add broth.

Bake uncovered at 350 for 25-30 minutes or until meat is 160°F.

Makes 4 servings.
