CAJUN CHICKEN JAMBALAYA 
1 (3 lb.) fryer
Salt and pepper to taste
Flour to coat chicken
3 tbsp. cooking oil
3 lg. onions, chopped
5 ribs celery, chopped
2 cloves garlic, chopped
1/4 c. bell pepper, chopped
2 c. uncooked rice
3 1/2 c. water

Cut chicken into serving pieces. Remove skin. Season with salt and pepper and coat with flour. Heat oil in a skillet and fry chicken until brown. Remove from skillet.

Place onions, celery, garlic and bell pepper in the skillet and cook until wilted. Put chicken back into the pan with onion mixture and cook until tender. Add rice. Stir well for about 2 or 3 minutes. Add water and cook until rice is tender. Other meats or shrimp may be substituted.
