CHICKEN JAMBALAYA 
1 regular size chicken, cut into pieces
1/2 lb. sausage
1/3 c. minced onion
2 green onions, chopped
1 diced bell pepper, seeds and membrane removed
1 c. rice
1 bay leaf
1/4 tsp. thyme
1/4 c. chopped parsley
1 tsp. salt
1/4 tsp. pepper
1 lg. can tomato sauce
3 c. boiling water

Saute chicken and remove. Add onions and sausage to oil or butter. Stir in green pepper, celery and rice. Mix well and add chicken. Cover well with water, tomato sauce and seasonings. Simmer until chicken is tender and rice is done, 30-45 minutes.

Jambalaya will dry out by placing it about 5 or 10 minutes in a 350 degree oven.
