CHICKEN AND SAUSAGE JAMBALAYA 
1 1/2 lbs. chicken
1 1/2 lbs. hot sausage
4 tbsp. bacon drippings
1 lg. onion, chopped
1 green pepper, chopped
4 stalks celery, chopped
2 cloves garlic
1 can tomatoes
2 c. rice
3 3/4 c. (2 cans) chicken broth
4 green onions, chopped
1/2 tsp. cayenne pepper

Brown cubed chicken in drippings. Remove chicken and saute onions, pepper, celery and garlic. Add tomatoes, chicken and sausage. Add liquid. Cover and simmer for 30 minutes. Bring to a boil and add rice, salt and cayenne pepper. Cover and cook for 20 minutes.
