ZUCCHINI SUPPER CASSEROLE 
3 tbsp. olive oil
1 onion, sliced thin
1 lb. ground beef
3 (8 oz.) cans tomato sauce
1 tbsp. sugar
Dash garlic powder
1 tsp. Italian seasoning
1 c. burgundy or claret wine
Salt and pepper
6 med. zucchini (2 lb.)
Boiling water
Parmesan cheese

Heat olive oil, add onion and ground beef, stir until brown. Add next 5 ingredients and salt and pepper to taste. Lower heat and simmer one hour. Stir often.

Wash and trim ends of zucchini. Cook whole in boiling water 15 minutes or until just tender. Drain and cool. Cut in half lengthwise, then crosswise (4 pieces). Arrange cut side up in single layer in a shallow pan. Pour sauce over zucchini. Bake 45 minutes at 350 degree oven. Sprinkle with Parmesan cheese. (About 6 servings)
