JAMBALAYA 
1 lb. bacon, cut into 4" strips
1/2 c. chopped onion
2 med. green peppers, cut into 1" strips
1 c. raw rice
1 tsp. chopped garlic
1 lb. can whole tomatoes with juice
1 1/2 tsp. thyme
1/2 tsp. salt
1/2 tsp. black pepper
2 c. chicken stock
1/2 lb. cooked ham, cut into 1" strips (such as Va. baked, thick cut)
1 lb. raw med. shrimp, peeled
3-4 raw chicken breasts, cut into 1" strips

In 3 quart heavy pot, fry bacon to medium crispness. Pour off all except 1 tablespoon grease. Add onions and green pepper. Saute until limp. Add rice and cook until opaqued. Add seasonings and tomatoes with juice. Let simmer 20 minutes. Add 1 cup chicken stock. Add ham, shrimp and chicken.
