JAMBALAYA 
1 lb. chicken, boned and skinned
1 lb. Italian sausage
2 green peppers
1 med. onion, chopped
1 tsp. cayenne pepper
1 tsp. sugar
2 jars salsa (16 oz.)
3 (15 oz.) cans tomato sauce
1 tsp. garlic salt
2 tbsp. oil
2 bunches green onions, chopped

Cut chicken, sausage and green peppers into bite size pieces. Saute onions and peppers in oil until tender. Add chicken and sausage and brown. Add salsa and tomato sauce, stir. Add garlic salt, cayenne and sugar and stir. Simmer over low heat 1 hour, stirring occasionally. Serve over rice. 10-12 servings.
