BUTTERMILK BISCUIT MIX 
8 cups all-purpose flour
1 1/2 cups buttermilk powder
4 tbsp. baking powder
3 tbsp. sugar
2 tsp. salt
2 tsp. cream of tartar
1 tsp. baking soda
2 1/3 cups shortening

In a bowl combine first 7 ingredients; cut in the shortening; mix until crumbly. Store in an airtight container in a cool dry place or up to 6 months. Use in any recipe calling for biscuit mix.

Yield: 13 1/2 cups.

How to make biscuits:

1 cup mix
1 egg
1/2 cup milk

In a bowl, mix together lightly, pat out and cut with a 2 1/2-inch biscuit cutter dipped in flour. Bake in a preheated 400°F oven until golden brown.
