RIB ROAST OF BEEF 
Don't ask me why it works----but it does. Salt and pepper - no flour

No matter how large the roast is and no matter when you are going to serve it, do this: Place beef in roasting pan, uncovered, and put in 375 degree oven for 1 hour. Turn off oven, but DO NOT OPEN THE OVEN DOOR AT ALL.

For rare roast beef: 45 minutes before serving time turn oven to 300 degrees.

For medium roast beef: 50 minutes before serving time turn oven to 300 degrees.

For medium well done roast beef: 55 minutes before serving time turn oven to 300 degrees.
