PAN DE ELOTE 
1 lb. can cream style corn or blend whole corn
1 c. biscuit mix
1 egg, beaten
2 tbsp. melted butter
1/2 c. milk
1 (4 oz.) can chopped chilies
1/2 lb. Jack cheese, sliced thin
1 lb. wieners, sliced or leftover over meat of any kind

Mix first 5 ingredients until it makes a smooth batter. Pour 1/2 of mixture into a well greased 9 x 13 inch pan. Cover with green chilies, meat, then a layer of Jack cheese. Cover all with remaining batter. Bake at 400 degrees for 20-25 minutes or until brown.
