PICKLED OKRA | |
1 garlic per pint 1/2 hot pepper to pint Okra 1 tsp. dill seed per pint 1 qt. vinegar 1 c. water 1/2 c. salt (a little less) Place garlic and hot pepper in bottom of hot jar. Remove ends of okra stem. Pack okra firmly in jars and add dill seed. Bring vinegar, water, salt to boil. Simmer 5 minutes. Add 1/2 teaspoon alum to vinegar, water for crispness. Pour over okra; seal jars. Yield enough for 8 pints. |
