POTATO SALAD 
4 lg. potatoes
6 eggs
2 carrots, grated
3 to 4 dill pickles, grated
3 to 4 pieces celery, diced
2 to 3 tsp. (Boarding House Seasonings) potato salad seasoning
Mayonnaise
Salt & pepper

Peel, dice, cook and cool potatoes. Hard boil eggs, cool. Dice egg whites, set yolks aside in bowl. Combine egg yolks with 1/2 cup mayonnaise. Beat well with electric mixer to blend. In large bowl combine potatoes, eggs, carrots, pickles, celery and seasoning mix. Stir in mayonnaise-egg mixture. Add enough additional mayonnaise to moisten. Salt and pepper to taste. Serves 8 to 10.
