SPINACH BALLS 
2 pkgs. frozen chopped spinach, cooked, very, very well drained
4 eggs, well beaten
2 c. (Pepperidge Farms) onion and garlic croutons
3/4 c. butter, softened
1 c. grated Parmesan cheese

While cooking spinach, beat eggs. Add croutons and mix with fork. Add melted butter and grated cheese. Add spinach and mix well. With teaspoon drop on cookie sheet bite-sized portions. Bake 350 for 12 minutes.

Makes 50.

(These may be made ahead and frozen. Bake about 18 to 20 minutes if frozen.)
