ENSAIMADAS - SPANISH SWEET BUNS 
Basic Sweet Dough
1/2 tsp. each cinnamon and nutmeg
About 1/4 cup butter, softened
1/4 c. honey, heated

Prepare dough, adding cinnamon and nutmeg to dry ingredients. Punch down risen dough. Knead lightly until smooth. Cover; let rest 5 to 10 minutes. On lightly floured surface roll out dough to thin rectangle; spread lightly with butter; fold in half; roll out and spread with butter again.

Fold in half; roll out to 15 x 12 inch rectangle. Cut in 12 (15 inch long) strips. Roll each in a 20 inch rope. On flat surface wind each into a coil shaped bun; tuck ends firmly underneath. Place about 2 inches apart on greased baking sheets. Cover; let rise 30 minutes or until doubled.

Bake in preheated 375 degree oven 15 minutes or until done. Remove to racks; immediately brush with honey. Makes 12.
