SUMMER SQUASH CASSEROLE 
1 sliced med. yellow summer squash
1/8 c. chopped onion
1/2 c. cream of chicken soup
1/2 c. sour cream
1/2 c. shredded carrot
9 oz. herb seasoned stuffing mix
1/4 c. melted butter

Cook squash and onion in salted water for 10 minutes. Combine all ingredients and top with herb seasoned stuffing mix. Bake in casserole for 25 to 30 minutes in 350 degrees oven.
